The office staff here at Taunton Cider made a fairly spectacular Cider, Apple and Sultana cake over the weekend and we have been enjoying it throughout the day today, why not try and make one for yourself:
- Size of Tin = 7” by 9.5” approx.
- 250 g of butter (room temperature)
- 250g caster sugar
- 5 eggs
- 250g self-raising flour
- 250g of sultanas
- 250 ml of Taunton Vintage Cider
- Tsp of mixed spice
- 1 Brambly apple
- 25g of demerara sugar
Soak the sultanas in the Vintage Cider until all the cider is socked up (overnight would be best)
Preheat oven to 180 normal 160 fan degrees Centigrade
Lined the square tin with grease proof paper and grease
Weigh out all ingredients.
Sift 25g of the flour into the cider absorbed sultanas (This will prevent them from sinking).
Slice and dice the Bramley Apple into small 5mm cubes
Sift the flour and combine all other ingredients in a mixing bowl, ensuring all ingredients are mixed well together.
Spoon the cake mixture into the bowl making sure there is an even coverage of apple and sultanas
Sprinkle 25g of demerara sugar over the top
Place in the oven and cook, 180 normal 160 fan between 40 to 60 minutes depending
Open 1 bottle of Taunton Cider, sit down and wait for the cake to bake.
