Tasty Taunton Cider Pancakes

 

Great news, Pancake Day is in exactly 2 weeks (1st March)! And what better way to prepare for one of the yummiest days of the year than level up your pancake making skills. 

We want to share with you a tasty, fluffy and dare we say addictive apple cider pancake recipe, plus the pancakes are so easy make.

Total Time: 30 minutes
Serves: 6

 

Ingredients:

Taunton Cider Pancakes

  • 250g all purpose flour
  • 8g baking powder
  • 4g baking soda
  • 3g salt
  • 1g nutmeg
  • 66g sugar
  • 236ml buttermilk (or substitute at room temperature)
  • 237ml Taunton Cider at room temperature (we used Taunton Cider Vintage)
  • 2 large eggs (room temperature, beaten)
  • 56g butter (room temperature)
  • 45ml vanilla extract

Pan Fried Apples

  • 3 medium apples (we used Pink Lady Apples)
  • 55g brown sugar
  • 28g butter
  • 2g ground cinnamon

Caramel Taunton Cider Syrup

 

Instructions:

  1. Melt the butter and let it cool.  Then, in a large mixing bowl combine the dry ingredients. 
  2. In a medium mixing bowl combine the beaten eggs, buttermilk, Taunton Cider and vanilla extract. Add the cooled and melted butter and whisk together. 
  3. Pour the liquid ingredients with the dry ingredients and whisk so it would form a lumpy cake like mixture.
  4. Pour the batter into a greased preheated frying pan, cook until bubbles have formed and the bottom is golden and then flip the pancake. (This is your time to show off your pancake flipping skills). Remove from heat when ready and serve warm. 

Pan Fried Apples - To serve over your pancakes

  1. Cut the apples into even slices and chunks.
  2. Heat a small or medium skillet to medium heat. Melt the butter and add the cut apples. Cook it while stirring occasionally, until tender. 
  3. Add the brown sugar and cinnamon - stir so they would coat the apples. Remove from heat so it can start beginning to caramelise. 

Caramel Taunton Cider Syrup

  1. Bring a saucepan to a medium heat. Melt the butter - as soon as melter add in the Taunton cider and brows sugar. Stir it. 
  2. Whisk the syrup often and bring to a low boil. Allow it to boil at a low heat for almost 1 minute while whisking constantly. 
  3. Remove from heat - serve warm.
